Jerusalem artichoke leaves are the leaves of the Jerusalem artichoke plant (Helianthus tuberosus), a perennial plant of the composite family. The plant is also called earth artichoke and is native to North America. The leaves of the Jerusalem artichoke plant are green and have a heart-shaped or oval form.

Jerusalem artichoke leaves are often used as part of the diet for guinea pigs, chinchillas, degus and rabbits. They are a good source of fibre, vitamins and minerals. The leaves contain vitamin C, vitamin A, iron, calcium and magnesium, among others. For guinea pigs, chinchillas, degus and rabbits, including dwarf rabbits and rams, Jerusalem artichoke leaves help to vary and enrich their diet.

They can be used as part of a balanced diet consisting of a mixture of hay, fresh vegetables, fruit and special pet foods.
